Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, mix together the oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool completely before frosting.
