A comforting and flavorful stir-fried noodle dish, packed with vegetables and seasoned with garlic, ginger, and soy sauce.

Ingredients

  • 8 oz chow mein noodles
  • 2 tbsp vegetable oil
  • 1 cup mixed vegetables (carrots, bell peppers, broccoli, etc.)
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tbsp soy sauce
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Cook the chow mein noodles according to package instructions; drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add garlic and ginger; sauté until fragrant.
  4. Add mixed vegetables; stir-fry for about 3-4 minutes until they are crisp-tender.
  5. Stir in the cooked noodles and soy sauce, tossing everything together for about 2-3 minutes until heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.

Notes

Prep ahead by chopping vegetables and mincing garlic and ginger beforehand. Use high heat for the best stir-fry texture.
