Crispy, golden zucchini fritters enriched with nutty toasted sesame seeds, perfect for any meal or snack.

  • 2 cups grated zucchini (excess moisture squeezed out)
  • 1/4 cup toasted sesame seeds (coarsely chopped)
  • 1 cup all-purpose flour
  • 1 large egg (beaten)
  • 2 tablespoons olive oil (for frying)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Grate the zucchini using a box grater and squeeze out excess moisture using a clean kitchen towel.
  2. Combine in a large mixing bowl the grated zucchini, toasted sesame seeds, flour, beaten egg, salt, and black pepper until a thick batter forms.
  3. Heat a tablespoon of olive oil in a frying pan over medium heat.
  4. Scoop about 2-3 tablespoons of the batter and form a patty.
  5. Place the patty in the hot oil, pressing down slightly.
  6. Fry each fritter for about 3-4 minutes on each side until golden brown and crispy.
  7. Transfer the fritters to a paper towel-lined plate to drain excess oil.
  8. Repeat with the remaining batter, adding more oil as necessary.
  9. Serve warm, garnished with additional toasted sesame seeds or a favorite dipping sauce.

Notes

Squeeze out moisture thoroughly for best texture. Experiment with spices for unique flavors.
