Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the yellow squash into 1/4 inch rounds.
  3. Toss the squash slices in a bowl with olive oil, salt, pepper, and garlic powder (if using).
  4. Arrange the squash slices in a single layer on a baking sheet.
  5. Bake for about 15-20 minutes, flipping halfway through, until they are golden and tender.
  6. Sprinkle with grated Parmesan cheese before serving, if desired.
