A creamy and flavorful dip combining white beans and roasted red peppers, perfect for any gathering.

  • 1 can (15 oz) white beans, rinsed and drained
  • 1 jar (12 oz) roasted red peppers, drained
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse and drain the white beans.
  2. Drain the roasted red peppers.
  3. Combine the rinsed white beans, roasted red peppers, olive oil, minced garlic, and lemon juice in a food processor.
  4. Blend the mixture until it reaches a smooth and creamy consistency, stopping to scrape down the sides as needed.
  5. Taste the seasoning by adding salt and pepper to your preference, then blend again briefly to incorporate.
  6. Scoop the creamy dip into a serving bowl and garnish with fresh parsley.
  7. Serve with pita chips, crackers, or fresh vegetables.

Notes

For added flavor, use freshly roasted peppers or a dash of crushed red pepper flakes. This dip tastes even better if made a day in advance.
