  • 1 French or sourdough baguette (sliced ½ inch thick)
  • 3 tablespoons olive oil (for brushing)
  • 1 pinch kosher salt (for seasoning)
  • 1 pinch black pepper (for seasoning)
  • 1.5 cups whole milk ricotta cheese (fresh is best)
  • 3 teaspoons extra-virgin olive oil
  • 0.5 teaspoon fresh thyme (finely chopped)
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon black pepper (freshly cracked)
  • 3 tablespoons toasted pistachios (roughly chopped)
  • 2 tablespoons honey (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet.
  3. Brush the tops of the baguette slices with olive oil.
  4. Sprinkle a pinch of kosher salt and black pepper over the slices.
  5. Bake in the oven for 5-7 minutes, or until golden brown.
  6. Remove the baguette slices from the oven and let them cool slightly.
  7. In a mixing bowl, whisk together the ricotta cheese, extra-virgin olive oil, fresh thyme, kosher salt, and cracked black pepper until creamy and smooth.
  8. Spread the whipped ricotta mixture generously over each toasted baguette slice.
  9. Top with the toasted pistachios for added crunch.
  10. Drizzle honey over each crostini just before serving.
