A simple yet flavorful vegan curry made with fresh vegetables and coconut milk, perfect for busy weeknights.

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups mixed fresh vegetables (e.g., bell peppers, carrots, zucchini)
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in garlic and ginger, cooking for another minute.
  4. Add mixed vegetables and cook until they start to soften, about 5-7 minutes.
  5. Pour in coconut milk and add curry powder. Stir well and bring to a simmer.
  6. Season with salt and pepper to taste.
  7. Simmer for an additional 5 minutes.
  8. Serve over cooked rice or quinoa.
