Delicious plant-based dessert recipe for everyone!

Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (fresh or frozen)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the rolled oats, almond flour, maple syrup, melted coconut oil, and vanilla extract until well combined.
  3. Press half of the mixture into the bottom of a greased 8×8 inch baking dish to form the crust.
  4. In another bowl, combine the mixed berries, cornstarch, and lemon juice. Stir gently to coat the berries.
  5. Spread the berry mixture evenly over the crust in the baking dish.
  6. Sprinkle the remaining oat mixture on top of the berries.
  7. Bake for 25-30 minutes, or until the top is golden brown.
  8. Allow to cool before slicing into bars.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • Feel free to use any combination of berries you like.
  • For a sweeter crumble, add more maple syrup to the berry mixture.
