- 2 cups rolled oats
- 1 cup almond flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 2 cups mixed berries (fresh or frozen)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the rolled oats, almond flour, maple syrup, melted coconut oil, and vanilla extract until well combined.
- Press half of the mixture into the bottom of a greased 8×8 inch baking dish to form the crust.
- In another bowl, combine the mixed berries, cornstarch, and lemon juice. Stir gently to coat the berries.
- Spread the berry mixture evenly over the crust in the baking dish.
- Sprinkle the remaining oat mixture on top of the berries.
- Bake for 25-30 minutes, or until the top is golden brown.
- Allow to cool before slicing into bars.
Notes
- Store leftovers in an airtight container in the refrigerator.
- Feel free to use any combination of berries you like.
- For a sweeter crumble, add more maple syrup to the berry mixture.
