  • 4 firm pears, peeled and halved
  • 2 cups water
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split and seeds scraped
  • 1/4 cup bourbon
  • 1 strip lemon zest
  • 1 tablespoon lemon juice

Instructions

  1. Combine water, sugar, split vanilla bean with seeds, lemon zest, and lemon juice in a medium saucepan.
  2. Bring the mixture to a gentle simmer, stirring until the sugar is dissolved.
  3. Add the pears, cut side down, to the simmering liquid.
  4. Cover the surface with a round of parchment paper.
  5. Poach the pears over low heat for 15 minutes.
  6. Add bourbon and continue poaching for another 8-10 minutes, or until pears are tender.
  7. Remove pears with a slotted spoon and set aside.
  8. Increase heat and reduce the poaching liquid to a syrupy consistency, about 5 minutes.
  9. Serve pears warm or chilled, drizzled with the vanilla bourbon syrup.

For a diabetic-friendly version, use sugar substitutes like stevia or monk fruit, avoiding honey and maple syrup.
