Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add diced onion and garlic; sauté until softened.
  3. Add ground turkey; cook until browned.
  4. Stir in bell pepper, zucchini, chili powder, cumin, salt, and pepper; cook for another 5 minutes.
  5. Add diced tomatoes, kidney beans, and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Adjust seasoning if needed and enjoy!
