  • 1 lb lean ground turkey
  • 1 small batch homemade seasoning blend (chili powder, cumin, garlic powder, onion powder, salt, pepper)
  • 1 can black beans, drained and rinsed
  • 1 can green chiles, chopped
  • 1 cup Monterey Jack cheese, shredded
  • 8 flour tortillas
  • 1 avocado
  • 1/2 cup sour cream or yogurt
  • Lime juice (for dipping sauce)
  • Salt and pepper (to taste for dipping sauce)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the ground turkey in a skillet over medium heat until browned. Add the homemade seasoning blend and stir well.
  3. Stir in the black beans and green chiles, and cook for an additional 2-3 minutes.
  4. Warm the flour tortillas in the oven for a few minutes until soft.
  5. Fill each tortilla with the turkey mixture and add shredded Monterey Jack cheese.
  6. Place the filled tortillas in a baking dish, seam-side down, and bake in the oven for 10-15 minutes or until crispy and the cheese is melted.
  7. Blend the avocado with sour cream or yogurt, lime juice, salt, and pepper until smooth for the creamy dipping sauce.
  8. Serve the tacos hot with the creamy dipping sauce on the side.
