A delightful rustic dish made with ripe tomatoes, creamy mozzarella, and a crispy pie crust, perfect for summer gatherings.

Ingredients

  • 1 sheet of pie crust
  • 4-5 ripe tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust on a baking sheet lined with parchment paper.
  3. Layer the sliced tomatoes over the crust, leaving a border around the edges.
  4. Sprinkle the mozzarella and Parmesan cheeses over the tomatoes.
  5. Drizzle olive oil over the top, and season with salt, pepper, and fresh basil.
  6. Fold the edges of the crust over the filling to create a border.
  7. Bake for 35-40 minutes, or until the crust is golden brown and the tomatoes are tender.
  8. Let cool slightly before slicing and serving.

Notes

Use the ripest tomatoes for the best flavor. Pre-salt tomatoes to prevent a soggy crust.
