Tomato Basil Soup

A comforting bowl of tomato basil soup that warms the heart and soul, perfect for autumn evenings.

Ingredients

  • 4 cups fresh tomatoes, halved
  • 1 cup basil leaves
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup cream or coconut milk
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the fresh tomatoes in half and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for about 30 minutes until the tomatoes are caramelized.
  4. Heat olive oil over medium heat in a large pot. Add diced onion and minced garlic, cooking until soft.
  5. Add the roasted tomatoes and vegetable broth to the pot.
  6. Bring to a simmer and cook for 15 minutes.
  7. Blend the soup until smooth using an immersion blender or regular blender.
  8. Stir in the cream or coconut milk and fresh basil leaves.
  9. Adjust seasoning with salt and pepper.
  10. Serve warm and enjoy!

Notes

For a thicker soup, add less broth; for a thinner consistency, add more. Fresh ingredients yield the best flavor.
