A creamy and flavorful dish that combines marinated tofu with a rich tomato and coconut cream sauce, evoking the vibrant flavors of India.

  • 1 block firm tofu, drained and pressed
  • 1 cup yogurt (dairy or plant-based)
  • 2 tablespoons tikka masala spice blend
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut cream
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. Combine the yogurt and tikka masala spice blend in a bowl.
  3. Marinate the tofu cubes in the yogurt mixture for at least 30 minutes to absorb the flavors.
  4. Heat olive oil in a large skillet over medium heat.
  5. Sauté the onion, stirring frequently, until golden and translucent.
  6. Add the garlic and ginger, cooking for another minute until fragrant.
  7. Pour in the diced tomatoes and bring to a simmer.
  8. Stir in the marinated tofu, ensuring it’s well-coated in the sauce.
  9. Simmer for 10 minutes, letting the flavors meld together.
  10. Add coconut cream and lemon juice, stirring until combined.
  11. Season with salt to taste and let it cook for an additional 5 minutes.
  12. Garnish with fresh cilantro before serving.

Notes

For enhanced flavor, marinate the tofu overnight. Adjust spices to your heat tolerance and consider adding vegetables like spinach or bell peppers.
