Ingredients

Scale
  • 1 ½ cups cake flour
  • 1 ½ tsp baking powder
  • A pinch of salt
  • ½ cup unsalted butter, softened
  • ½ cup sugar
  • ½ tsp vanilla extract
  • 2 large eggs
  • ½ cup whole milk
  • 3 Tbsp instant espresso powder
  • 3 Tbsp boiling water
  • 4 ½ cups full-fat mascarpone cheese, cold
  • 2 ½ cups powdered sugar, sifted
  • ½ cup espresso or strong coffee, chilled
  • 1 ½ cups heavy whipping cream, cold

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. Whisk together cake flour, baking powder, and salt in a bowl; set aside.
  3. Cream softened butter and sugar in a large bowl until light and fluffy. Add vanilla and mix well.
  4. Incorporate eggs one at a time, mixing well after each addition. Pour in milk and mix until smooth.
  5. Fold in flour mixture gradually until just combined.
  6. Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. Combine instant espresso with boiling water; let it cool.
  8. Beat heavy whipping cream in a large bowl until soft peaks form.
  9. Beat mascarpone and powdered sugar in another bowl until smooth. Gently fold whipped cream into mascarpone mixture until combined.
  10. Soak each cake layer with chilled espresso. Spread mascarpone frosting on the first layer, place the second layer on top, and frost top and sides of cake.
  11. Chill for at least 120 minutes before serving to allow flavors to meld.

Notes

Use cold mascarpone and whipping cream for best results. Experiment with espresso strength to suit your taste.
