A flavorful and quick stir fry dish that combines ground turkey with a homemade teriyaki sauce and fresh mixed vegetables.

  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas)
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • Zest of 1 orange
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Whisk together soy sauce, honey, rice vinegar, ginger, garlic, and orange zest to make the teriyaki sauce.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add the ground turkey and cook until browned, breaking it apart with a spatula.
  4. Add the mixed vegetables and stir-fry for another 5 minutes until the veggies are tender-crisp.
  5. Pour the teriyaki sauce over the turkey and vegetables, stirring to coat.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice or noodles.
