Tahini Caesar Brussels Sprouts

A delightful fusion of Caesar salad and tahini, these Brussels sprouts are a rich and crunchy dish perfect for gatherings.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 ½ pounds Brussels sprouts (trimmed and halved lengthwise)
  • Kosher salt and black pepper
  • 3 oil-packed anchovy fillets (chopped)
  • 1 large garlic clove (chopped)
  • ¾ teaspoon kosher salt
  • 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons Parmesan cheese (finely grated)
  • 2 cups hearty whole-wheat bread (broken into craggy pieces)
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons roasted sunflower seeds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the Brussels sprouts in a roasting pan with 2 tablespoons of olive oil, kosher salt, and black pepper until well-coated.
  3. Roast the Brussels sprouts in the preheated oven for 25–30 minutes, turning halfway through until caramelized and tender.
  4. Combine the chopped anchovy fillets and garlic in a small bowl with ¾ teaspoon kosher salt.
  5. Whisk together the tahini, lemon juice, Dijon mustard, and 3 tablespoons of olive oil until smooth in another bowl.
  6. Add the anchovy and garlic mixture to the tahini dressing, stirring until combined.
  7. Transfer the roasted Brussels sprouts to a large bowl and drizzle with the tahini Caesar dressing, tossing to coat.
  8. Sprinkle the finely grated Parmesan cheese over the dressed sprouts.
  9. Mix the hearty whole-wheat bread pieces with the remaining olive oil in a separate bowl.
  10. Spread the bread pieces on a baking sheet and toast them in the oven for 5-7 minutes, or until golden brown and crisp.
  11. Sprinkle the toasted bread over the Brussels sprouts along with the roasted sunflower seeds for added crunch.
  12. Serve warm, enjoying the balance of flavors and textures.

Notes

For a vegan option, omit the anchovies and substitute the Parmesan with a plant-based alternative.
