A healthy and delicious quiche featuring a sweet potato crust, filled with spinach and feta cheese.

Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 4 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into thin rounds.
  3. In a bowl, toss the sweet potato slices with olive oil, salt, and pepper.
  4. Layer the sweet potato slices in a pie dish to form a crust.
  5. Bake the crust for 20 minutes until slightly tender.
  6. In a skillet, sauté the chopped spinach until wilted.
  7. In a bowl, whisk together the eggs and milk, then stir in the sautéed spinach and feta cheese.
  8. Pour the egg mixture into the sweet potato crust.
  9. Bake for an additional 25-30 minutes, or until the quiche is set and lightly golden.
  10. Let it cool for a few minutes before slicing and serving.

  • For a spicier version, add red pepper flakes to the egg mixture.
