A delightful blend of sweet potatoes and chicken, these poppers are crispy on the outside and tender on the inside, perfect for any gathering.

Ingredients

  • 2 cups of cooked and shredded chicken
  • 1 cup of mashed sweet potatoes
  • 1/2 cup of breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

  1. Cook the sweet potatoes until fork-tender, about 20 minutes.
  2. Mash the cooked sweet potatoes in a bowl.
  3. Combine shredded chicken, mashed sweet potatoes, breadcrumbs, and Parmesan cheese in a large mixing bowl.
  4. Crack the egg into the mixture.
  5. Sprinkle garlic powder, onion powder, salt, and black pepper into the bowl.
  6. Mix the combined ingredients until fully incorporated.
  7. Form small balls or patties from the mixture.
  8. Heat oil in a skillet over medium heat.
  9. Fry the poppers until golden brown on both sides, about 3-4 minutes per side.
  10. Remove from the skillet and place on paper towels to drain excess oil.
