- 2 apples (cored and peeled)
- 2 large eggs
- ½ cup (50 g) cocoa powder
- ½ tsp baking powder (optional but recommended)
- 2 to 3 tbsp maple syrup (for sweeter brownies)
- 1 tsp vanilla extract
- ⅙ tsp salt

Instructions
- Preheat oven to 350°F (180°C) and line a 7×7 inch brownie pan with parchment paper.
- Cut the apples into chunks, then add to a blender with eggs, cocoa powder, and optionally baking powder. Blend on high until smooth and free of lumps.
- Optionally, add 2 to 3 tablespoons of maple syrup for sweeter brownies.
- Transfer the batter to the prepared pan and spread it out evenly with a spatula.
- Bake in the hot oven for 20 to 27 minutes, or until the center is no longer raw. Let cool completely at room temperature before slicing.
Notes
For a vegan version, substitute eggs with flax eggs or applesauce. Store in an airtight container for up to 5 days or freeze for up to 3 months.
