A creamy, cheesy dip inspired by traditional Mexican street corn, perfect for sharing at gatherings.

Ingredients

  • 2 cups corn (fresh, frozen, or canned)
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup mayonnaise
  • 1-2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Chips, crackers, or vegetables for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine in a mixing bowl the corn, cream cheese, sour cream, shredded cheese, mayonnaise, lime juice, chili powder, garlic powder, cayenne pepper (if using), salt, and pepper.
  3. Mix until all ingredients are well combined.
  4. Transfer the mixture to a baking dish and smooth the top.
  5. Bake in the preheated oven for about 20 minutes, or until the dip is heated through and bubbly.
  6. Remove from the oven and garnish with chopped cilantro.
  7. Serve warm with chips, crackers, or vegetables.

Notes

For a spicier kick, add more cayenne pepper. Use fresh corn for a delightful crunch in season.
