A delicious and flavorful steak dish topped with homemade herb butter, perfect for any occasion.

Ingredients

  • 2 (1 lb each) bone-in strip steaks, 1½ thick (or your steak of choice)
  • Grapeseed or vegetable oil for brushing
  • ¾ tablespoon rock salt
  • 1½ teaspoons whole black peppercorns
  • ½ teaspoon dried minced garlic
  • ½ teaspoon dried minced onion
  • ¼ teaspoon fennel seeds
  • ⅛ teaspoon red chili pepper flakes
  • Big pinch of steak seasoning (from above)
  • 1 stick (½ cup) salted butter, softened to room temperature
  • 1 tablespoon finely minced fresh rosemary
  • 1 tablespoon finely minced fresh thyme
  • 2 tablespoons chopped parsley
  • 1 garlic clove (pressed or minced)

Instructions

  1. Prepare the steak seasoning: Combine rock salt, whole black peppercorns, dried minced garlic, dried minced onion, fennel seeds, and red chili pepper flakes in a spice grinder. Whirl until finely ground.
  2. Season the steaks: Rub the steaks with grapeseed or vegetable oil. Generously coat both sides with the prepared steak seasoning, pressing it in for better flavor absorption.
  3. Make the herb butter: In a bowl, mix the softened butter with rosemary, thyme, parsley, and the pressed garlic until well combined. Roll into a log shape using plastic wrap and refrigerate until firm.
  4. Grill the steaks: Preheat the grill to high heat. Place the seasoned steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or longer if desired.
  5. Rest and serve: Remove the steaks from the grill and let them rest for 5-10 minutes. Slice and top with a pat of herb butter. Serve immediately.

Notes

Let the steak come to room temperature before grilling for even cooking. Allow the meat to rest after grilling to keep it juicy.
