Delightful spelt flour fritters bursting with sweetcorn flavor, perfect for any occasion.

Ingredients

  • 120 g spelt flour
  • 1 tsp baking powder
  • ½ tsp fine salt
  • ¼ tsp black pepper
  • 2 large eggs
  • 120 ml milk
  • 1 tbsp olive oil
  • 250 g sweetcorn kernels
  • 2 spring onions
  • ½ tsp smoked paprika (optional)
  • 2 tbsp fresh coriander
  • 2-3 tbsp neutral oil

Instructions

  1. Combine spelt flour, baking powder, salt, and pepper in a bowl.
  2. Stir in the eggs, milk, and olive oil to form a smooth batter.
  3. Add sweetcorn, spring onions, paprika, and coriander. Stir until mixed.
  4. Warm oil in a non-stick frying pan over medium heat.
  5. Spoon small rounds of batter into the pan.
  6. Fry for 2–3 minutes per side until golden.
  7. Place fritters on kitchen paper and add a light pinch of salt if needed.
