A delightful twist on the classic Greek spanakopita, these puff pastry swirls are filled with fresh spinach, feta cheese, and creamy goodness.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup cream cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 package puff pastry sheets
  • 2 tablespoons olive oil, for brushing
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine chopped spinach, crumbled feta, cream cheese, minced garlic, chopped onion, dill, salt, and pepper until well mixed in a large mixing bowl.
  3. Roll out the puff pastry sheets on a clean surface.
  4. Spread the spinach and cheese mixture evenly over the pastry sheets.
  5. Carefully roll the puff pastry into a log and slice into 1-inch wide swirls.
  6. Place the swirls on the prepared baking sheet and brush the tops with olive oil.
  7. Bake for 15-20 minutes, or until the swirls are golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.

Notes

Make sure to thoroughly drain the spinach to avoid a soggy filling. Experiment with other herbs like parsley or mint for a unique twist.
