Delightful muffins that combine sourdough and fresh peaches for a unique flavor and texture, topped with a sweet vanilla glaze.

  • ½ cup salted butter (1 stick, softened)
  • 1½ cups white sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup whole milk
  • ¾ cup sourdough discard or active starter
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 3 cups all-purpose flour
  • 1½ cups brown sugar
  • 5 tablespoons all-purpose flour
  • 4 teaspoons ground cinnamon
  • 6 tablespoons salted butter (melted)
  • 3½ cups diced peaches (or three 15oz cans peaches in juice, drained and diced)
  • ⅓ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin.
  2. Combine softened butter and white sugar in a large mixing bowl and beat until creamy.
  3. Add vanilla extract, eggs, and whole milk to the mixture.
  4. Blend in the sourdough discard until thoroughly combined.
  5. Incorporate salt, baking powder, and flour until just combined.
  6. Mix together the brown sugar, 5 tablespoons of flour, and cinnamon in another bowl for the filling.
  7. Fold in the diced peaches to the muffin batter.
  8. Spoon a layer of muffin batter into each muffin cup, filling them halfway.
  9. Sprinkle a tablespoon of the cinnamon sugar filling mix on top of the batter.
  10. Cover with additional muffin batter until cups are filled to the rim.
  11. Drizzle melted butter over the tops of the muffins.
  12. Bake for 20-25 minutes or until a toothpick comes out clean.
  13. Allow muffins to cool in the pan for about 10 minutes, then transfer to a wire rack.
  14. For the glaze, combine powdered sugar, vanilla, and enough milk to create a drizzle-like consistency.
  15. Drizzle the vanilla glaze over cooled muffins.

Notes

For a dairy-free version, substitute the butter and whole milk with plant-based alternatives. Use sugar substitutes if needed for diabetics.
