Sourdough Oatmeal Chocolate Chip Cookie Bars

Delightful cookie bars combining the tangy joy of sourdough with oatmeal and chocolate, perfect for any occasion.

Ingredients

  • 1 cup salted butter (melted)
  • 1½ cups brown sugar
  • 2 eggs
  • ½ cup sourdough discard
  • 3 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 2½ cups oats
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Line a 9×13 glass baking dish with parchment paper and set aside.
  3. Add melted butter and brown sugar to a mixing bowl and combine.
  4. Add eggs, sourdough discard, and vanilla extract.
  5. Mix to combine.
  6. Add salt, baking soda, and ground cinnamon.
  7. Mix and scrape down sides of bowl with a spatula as needed.
  8. Add flour and oats and mix well.
  9. Fold in chocolate chips.
  10. Pour batter into parchment-lined baking pan and spread evenly with a spatula.
  11. Bake at 350°F (180°C) for 20-22 minutes until golden brown all over and the middle is mostly set.
  12. Allow to cool completely before slicing and serving. Enjoy!

Notes

Use room temperature ingredients for better blending. Don’t skip the parchment paper to prevent sticking.
