Delightful no-bake Smores Energy Bites that capture the essence of campfire nostalgia while packing a nutritious punch.

Ingredients

  • 1/2 cup nut butter (like peanut butter or almond butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips
  • 1/4 cup graham cracker crumbs
  • 1/4 cup mini marshmallows
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine in a large mixing bowl the rolled oats, nut butter, honey (or maple syrup), and vanilla extract.
  2. Stir in the chocolate chips, graham cracker crumbs, and mini marshmallows until well combined.
  3. Scoop out small portions of the mixture and roll them into bite-sized balls.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for about 30 minutes to set, then enjoy!
