A comforting and rich soup blending smoky Gouda cheese with fresh broccoli and cream, perfect for cozy evenings.

Ingredients

  • 2 cups broccoli florets
  • 1 cup carrots, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup smoked gouda cheese, shredded
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until translucent.
  2. Add diced carrots and broccoli florets, and cook for another 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender.
  4. Stir in the heavy cream and smoked gouda cheese, and cook until cheese is melted and soup is creamy.
  5. Season with salt and pepper to taste. Serve hot.

Notes

For a smoother texture, blend the soup after adding the cheese and cream. Store in an airtight container for up to 4 days or freeze for up to 3 months.
