Delightfully crispy smashed potatoes with a buttery interior and fragrant herbs, perfect for any gathering.

Ingredients

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Boil the baby potatoes in salted water until fork-tender, about 20 minutes.
  3. Drain and let cool slightly.
