A comforting and nutritious dish featuring ripe avocados on toasted sourdough bread, perfect for any meal.

Ingredients

  • 4 thick slices sourdough bread
  • 1 tablespoon olive oil
  • 2-3 ripe avocados
  • 1 lemon
  • Salt and pepper to taste
  • 40 grams feta cheese (crumbled)
  • Everything bagel seasoning (to sprinkle)
  • Pea sprouts (for garnish)

Instructions

  1. Drizzle the olive oil over the sliced bread and place on a tray under the grill to toast until golden brown. Turn the slices over so that both sides are toasted and golden.
  2. Peel the avocados and roughly chop them into chunks.
  3. Add the avocado into a bowl and gently mash with a fork until chunky.
  4. Season with salt, pepper, and a generous squeeze of fresh lemon juice.
  5. Mix to combine, taste and adjust seasoning as necessary.
  6. Pile the avocado mixture over the toasted bread.
  7. Sprinkle over the crumbled feta followed by the everything bagel seasoning.
  8. Finish with pea sprouts for garnish and serve immediately with extra lemon wedges.

Notes

Choose ripe avocados for the best flavor and creamy texture. Consider experimenting with various toppings.
