A hearty and colorful dish combining smoky kielbasa, tender zucchini, sweet bell peppers, and butternut squash, perfect for any occasion.

Ingredients

  • 14 oz smoked kielbasa sausage (sliced into rounds)
  • 1 cup butternut squash (peeled and cubed)
  • 2/3 cup bell pepper (any color, chopped)
  • 1 small zucchini (sliced into half-moons)
  • 1/3 cup red onion (chopped)
  • 2 tablespoons California olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. Place the butternut squash cubes in a microwave-safe bowl and microwave for 2 minutes to soften slightly.
  3. Combine the pre-cooked squash with the bell pepper, zucchini, red onion, and sliced kielbasa in a large mixing bowl.
  4. Drizzle the olive oil over the top, then sprinkle on the thyme, smoked paprika, garlic salt, and black pepper.
  5. Toss everything together until each piece is evenly coated with the oil and spices.
  6. Line a baking sheet with parchment paper or aluminum foil for easier cleanup, if desired.
  7. Brush the baking sheet lightly with olive oil, then spread the seasoned sausage and veggies in a single layer.
  8. Bake for 25 minutes, or until the vegetables are cooked through and starting to brown at the edges.

Notes

For best results, cut vegetables into similar sizes for even cooking. Experiment with different types of sausages to suit your preferences.
