Delightful no-bake cookies combining shortbread, caramel, toasted coconut, and chocolate.

Ingredients

  • 1 cup shortbread cookies, crushed
  • 1/2 cup sweetened shredded coconut, toasted
  • 1/2 cup caramel sauce
  • 1/4 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Combine crushed shortbread cookies and toasted coconut in a bowl.
  2. Drizzle in caramel sauce and mix until well combined.
  3. Scoop out the mixture and form into small cookies, placing them on a parchment-lined tray.
  4. Melt chocolate chips and coconut oil together in a microwave-safe bowl, stirring until smooth.
  5. Drizzle the chocolate over the cookies.
