Tasty Greek Salad Pita Pockets

Delicious grilled chicken tucked in warm pita pockets, accompanied by a vibrant Greek salad.

Ingredients

  • 1.25 lb chicken (cut into 1-inch chunks)
  • 1.5 tbsp olive oil
  • 1 large garlic clove (freshly minced)
  • 1.25 tsp oregano
  • 1/2 lemon (juiced)
  • Salt to taste
  • Pepper to taste
  • 1.5 large cucumber (peeled and diced)
  • 1 cup yellow grape tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1/3 cup fresh mint (roughly chopped)
  • 1/2 cup feta (crumbled)
  • 1/4 cup kalamata olives
  • 4 pitas
  • 5 tbsp olive oil (for dressing)
  • 1 tbsp red wine vinegar
  • 2 large garlic cloves (minced)
  • 1/4 tsp dried dill
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare while your grill heats to medium-high.
  2. Peel and dice the cucumber into 1/2-inch pieces.
  3. Halve the yellow grape tomatoes.
  4. Thinly slice the red onion.
  5. Roughly chop the fresh mint.
  6. Crumble the feta.
  7. Minced both garlic cloves separately.
  8. Combine in a small bowl 1.5 tablespoons olive oil, 1 minced garlic clove, oregano, lemon juice, and a pinch of salt and pepper.
  9. Add the chicken chunks to this marinade and stir to coat evenly.
  10. Let the chicken sit for 10 minutes to marinate.
  11. Place the marinated chicken on the preheated grill.
  12. Cook for 4-5 minutes per side until cooked through.
  13. Transfer the chicken to a cutting board to rest before slicing.
  14. Whisk together 5 tablespoons olive oil, red wine vinegar, the remaining minced garlic, dill, salt, and pepper.
  15. Combine cucumber, tomatoes, onion, mint, feta, and olives in a bowl.
  16. Pour the dressing over the salad and toss gently.
  17. Let the salad sit for a minute to absorb flavors.
  18. Cut the pitas in half to create pockets.
  19. Toast them lightly on the grill or in a toaster.
  20. Divide the salad among the pita pockets and top with grilled chicken.
  21. Serve immediately while the pitas are still warm.

Notes

For the best flavor, marinate the chicken for at least 10 minutes. Customize your salad with seasonal vegetables.
