A comforting dish that combines tender chicken thighs with fresh rosemary and sweet apple cider, perfect for cozy fall dinners.

  • 4-5 Bone-In Chicken Thighs
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsp Fresh Rosemary, chopped
  • Salt and Pepper to taste
  • 1 Red Onion, sliced
  • 1-2 Honeycrisp Apples, sliced
  • 2-3 Rosemary Sprigs
  • Olive oil for searing
  • 4 tbsp Salted Butter
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or White Wine
  • 2 tbsp Dijon Mustard
  • 3 cloves Garlic, diced finely

Instructions

  1. Preheat the oven to 425°F.
  2. Season the chicken thighs with onion powder, garlic powder, smoked paprika, fresh thyme, chopped rosemary, salt, and pepper.
  3. Heat olive oil in a large, oven-safe skillet over medium heat.
  4. Sear the chicken thighs, skin-side down, for about 3-4 minutes on each side until golden brown.
  5. Scatter sliced red onions and apples around the chicken and garnish with rosemary sprigs.
  6. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
  7. Add butter, apple cider, chicken broth (or wine), Dijon mustard, and diced garlic to the same skillet after removing the chicken. Whisk until the sauce thickens.
  8. Return chicken and apples to the pan, spoon the sauce over them, and serve immediately.

Notes

Use organic chicken and fresh herbs for best flavor. Ensure to check the internal temperature for proper cooking.
