A tender and flavorful roasted leg of lamb infused with garlic, rosemary, and thyme, perfect for family gatherings and special occasions.

Ingredients

  • 1 leg of lamb (approximately 4-5 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • Salt to taste
  • Pepper to taste
  • 1 cup vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the leg of lamb dry with paper towels.
  3. Season generously with salt and pepper on all sides.
  4. Mix minced garlic, olive oil, rosemary, and thyme in a small bowl to create a paste.
  5. Rub the herb mixture all over the lamb, massaging it into the meat.
  6. Place the lamb in a roasting pan, fat side up.
  7. Add vegetable broth to the bottom of the pan.
  8. Roast for about 90-120 minutes, until a thermometer reads 135°F (57°C) for medium-rare.
  9. Baste halfway through roasting.
  10. Remove from the oven, tent with foil, and let rest for 15-20 minutes.
  11. Slice against the grain and serve.

Notes

Let the lamb come to room temperature before roasting for even cooking. Use fresh herbs for a vibrant flavor profile.
