A delightful roast chicken recipe featuring a flavorful marinade of citrus and spices, perfect for family gatherings or weeknight dinners.

Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 4 garlic cloves, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Whisk together olive oil, orange juice, lime juice, garlic, chili powder, cumin, paprika, oregano, salt, and pepper.
  2. Place chicken in a zip-top bag or dish and pour marinade over. Seal the bag or cover the dish and marinate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat or oven to 400°F (200°C).
  4. Cook chicken for 6-7 minutes per side if grilling until cooked through. If baking, place chicken on a baking sheet and bake for 35-45 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Allow the chicken to rest for 5 minutes before serving.
