  • 1 cup rhubarb (chopped)
  • 1/2 cup cream cheese (softened)
  • 1/4 cup sugar
  • 1 egg (beaten, for egg wash)
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the softened cream cheese, sugar, and vanilla extract in a bowl until smooth.
  3. Roll out the puff pastry and cut it into rectangles.
  4. Place a spoonful of the cream cheese mixture and some chopped rhubarb in the center of each rectangle.
  5. Fold or twist the pastry to enclose the filling, sealing the edges.
  6. Brush the tops with the beaten egg.
  7. Bake in the preheated oven for 15-20 minutes or until golden brown.
