A delightful layered dessert combining rich chocolate mousse, vibrant raspberry sauce, and brownie pieces, perfect for any occasion.

Ingredients

  • 1 ½ cups heavy whipping cream
  • ⅓ cup cocoa powder
  • ⅓ cup powdered sugar
  • ¼ tsp espresso powder
  • 1 cup raspberries
  • 2 tbsp white granulated sugar
  • Brownie bits
  • Extra raspberries

Instructions

  1. Chill a large mixing bowl in the freezer for 10 minutes.
  2. Pour heavy cream into the chilled bowl and beat with a hand mixer until frothy.
  3. Add powdered sugar, cocoa powder, and espresso powder; mix until slightly stiff peaks form.
  4. Transfer the mousse to a piping bag fitted with a star tip.
  5. In a saucepan, add raspberries and sugar over medium heat; mash slightly. Cook for 8 minutes until bubbly.
  6. Strain the raspberry mixture to remove seeds.
  7. Assemble parfaits by piping mousse into the bottom of each cup, followed by raspberry sauce, brownie bits, more mousse, raspberry sauce, and finishing with brownie bits and raspberries.

Notes

For a gluten-free option, use gluten-free brownies. Serve parfaits within a few hours for best texture.
