  • 1 cup heavy cream
  • 1 cup fresh raspberries
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/2 cup crushed graham crackers
  • 2 tablespoons melted butter

Instructions

  1. Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Beat the heavy cream in a mixing bowl until soft peaks form.
  3. Whisk together sugar, vanilla extract, and softened cream cheese until well combined.
  4. Fold the melted chocolate into the cream cheese mixture gently.
  5. Gradually add the beaten heavy cream into the chocolate mixture, folding carefully until fully incorporated.
  6. Layer the bottom of serving cups with crushed graham crackers mixed with melted butter.
  7. Spoon the chocolate mousse over the graham cracker crust in each cup.
  8. Chill in the refrigerator for at least 2 hours to allow flavors to meld and mousse to set.
  9. Top with fresh raspberries before serving.
