Delicious bite-sized Pumpkin Cake Pops that celebrate the flavors of fall with a blend of pumpkin, spices, and creamy cheesecake frosting.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup cheesecake frosting
  • Candy melts for coating
  • Sprinkles (optional)

Instructions

  1. Combine pumpkin puree, sugar, brown sugar, eggs, vegetable oil, and vanilla extract in a mixing bowl. Mix well.
  2. Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl. Gradually add dry ingredients to pumpkin mixture and mix until just combined.
  3. Bake the mixture in a greased cake pan at 350°F (175°C) for 25–30 minutes. Allow to cool.
  4. Crumble the cooled cake in a large bowl, add cheesecake frosting, and mix until well combined.
  5. Form the mixture into small balls and place on a baking sheet. Freeze for about 30 minutes.
  6. Melt candy melts in a microwave-safe bowl. Dip the ends of cake pop sticks into the melted candy and insert them into the cake balls.
  7. Dip each ball into the melted candy and coat thoroughly. Place on wax paper and let set.
  8. Decorate with sprinkles if desired. Enjoy your Pumpkin Cake Pops!

Notes

For a richer flavor, use fresh pumpkin puree. Avoid overmixing to maintain a light texture.
