A refreshing potato salad bursting with fresh flavors from leeks and herbs, perfect for any occasion.

Ingredients

  • 1 cup leeks, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 1/2 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool.
  2. Combine sliced leeks, parsley, and chives in a large bowl.
  3. Whisk together olive oil, apple cider vinegar, salt, and pepper in another bowl.
