A vibrant and flavorful dish featuring shrimp, cherry tomatoes, and pesto, perfect for any occasion.

Ingredients

  • 8 oz pasta (spaghetti or linguine)
  • 1 lb shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto sauce
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Season with salt and pepper.
  4. Stir in cherry tomatoes and cook for another 2 minutes.
  5. Add cooked pasta and pesto sauce to the skillet. Toss everything together until well combined and heated through.
  6. Serve topped with grated Parmesan and fresh basil.

Notes

Use fresh ingredients for the best flavor. Leftover pesto can be used as a spread or salad dressing.
