Ingredients

  • 1 cup gluten-free cornmeal
  • 1/2 cup gluten-free all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup finely chopped onion
  • 1 cup buttermilk
  • 1 large egg
  • Oil for frying

Instructions

  1. In a large bowl, mix together the cornmeal, gluten-free flour, baking powder, salt, and black pepper.
  2. Add the chopped onion, buttermilk, and egg to the dry ingredients and stir until just combined.
  3. Heat oil in a deep fryer or large pot to 350°F (175°C).
  4. Using a spoon, drop small balls of the batter into the hot oil.
  5. Fry until golden brown, about 3-4 minutes, turning occasionally.
  6. Remove hushpuppies from the oil and drain on paper towels.
