  • 1 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup vegan butter
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a round cake pan.
  2. Melt the vegan butter over low heat in a small saucepan, then stir in the brown sugar and maple syrup until combined. Pour this mixture into the bottom of the prepared cake pan.
  3. Sprinkle the pecans evenly over the sugar mixture.
  4. Combine flour, baking powder, baking soda, salt, and cinnamon in a mixing bowl.
  5. Whisk together the almond milk and vanilla extract in another bowl.
  6. Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
  7. Pour the batter over the pecan mixture in the cake pan.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow to cool for a few minutes, then invert the cake onto a serving plate to reveal the pecan topping.
  10. Serve warm and enjoy!
