Pecan Pie Bites

Delightful no-bake treats that combine the rich flavors of pecans, dates, and chocolate, perfect for a guilt-free dessert.

Ingredients

  • 1 cup pecans
  • 1 cup pitted dates (soaked)
  • 2 tbsp coconut sugar or monk fruit
  • Pinch sea salt
  • 1 tsp vanilla
  • 1 tsp cinnamon (optional)
  • 1 1/4 cup chocolate chips

Instructions

  1. Add everything to a food processor, besides the chocolate, until a sticky dough forms. This may take a few minutes; be sure to scrape down the sides every now and then.
  2. Roll the sticky mixture into balls and place on a lined cookie sheet.
  3. Flatten them down slightly with your palm.
  4. Place them in the freezer to firm up a little, about 15 mins.
  5. Melt the chocolate until smooth.
  6. Dip each cookie bite into the chocolate mixture and return to the cookie sheet.
  7. Place a pecan on top of each bite.
  8. Put back in the freezer until hardened.

Notes

For sugar substitutes, consider using stevia, monk fruit, or allulose instead of coconut sugar.
