A refreshing dish of crisp cucumbers coated in a creamy peanut sauce, perfect for sharing at family meals or gatherings.

  • 2 large cucumbers
  • 1 cup creamy peanut butter
  • ½ cup soy sauce
  • ¼ cup lime juice
  • 2 tablespoons honey
  • 1 garlic clove, minced
  • 1 teaspoon ginger, minced
  • ¼ cup chopped fresh cilantro
  • Crushed peanuts for garnish

Instructions

  1. Wash the cucumbers thoroughly under cold water.
  2. Slice the cucumbers into thin rounds or matchsticks.
  3. In a bowl, combine the peanut butter, soy sauce, lime juice, honey, garlic, and ginger.
  4. Whisk the mixture until it is smooth and well blended.
  5. Taste the peanut sauce and adjust the seasoning by adding more lime juice or soy sauce as desired.
  6. In a large serving bowl, add the sliced cucumbers.
  7. Pour the peanut sauce over the cucumbers.
  8. Toss gently to coat the cucumber slices thoroughly.
  9. Sprinkle with chopped cilantro and crushed peanuts for garnish.
  10. Serve immediately or allow to chill in the refrigerator for 30 minutes before serving.

Notes

If you prefer a thinner sauce, you can add a bit of warm water to achieve your desired consistency.
