Delicious dessert bars featuring ripe peaches and a buttery, crumbly topping, perfect for summer gatherings.

Ingredients

  • 2 cups fresh peaches, peeled and diced
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Combine peaches, sugar, cornstarch, vanilla extract, cinnamon, and salt in a bowl. Set aside.
  3. Mix flour, oats, brown sugar, butter, baking powder, and baking soda in another bowl until crumbly.
  4. Press half of the mixture into the bottom of the prepared baking dish to form the crust.
  5. Spread the peach filling over the crust.
  6. Crumble the remaining mixture on top of the peaches.
  7. Bake in the preheated oven for 30-35 minutes or until golden brown.
  8. Allow to cool before cutting into bars. Serve warm or chilled, optionally with a scoop of vanilla ice cream.

Notes

Use fresh, ripe peaches for the best flavor. Store leftovers in an airtight container for up to 4 days.
