  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter (melted)
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Make the Peach Jam: Combine 1 1/2 cups cubed peaches, 2 tablespoons sugar, 1 teaspoon lemon juice, 2 teaspoons cornstarch, and 1 tablespoon water in a saucepan. Cook over medium heat until thickened. Set aside.
  2. Make the Tangzhong: In a small saucepan, combine 1/4 cup bread flour with 3/4 cup water over low heat until thick. Allow to cool.
  3. Make the Dough: In a large mixing bowl, whisk together 3 2/3 cups bread flour, 1/3 cup granulated sugar, 2 teaspoons instant yeast, and 1 teaspoon fine sea salt. In another bowl, combine 1/3 cup milk, 1/3 cup heavy cream, 1 large egg, and Tangzhong. Mix wet ingredients into dry until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place until doubled in size (about 60 minutes).
  5. Assemble Filling: Roll out the dough into a rectangle. Spread 4 tablespoons butter over the dough. Evenly sprinkle with 2/3 cup brown sugar and 1 teaspoon ground cinnamon. Top with 1/2 cup thinly sliced peaches.
  6. Roll the dough tightly from one end to the other, pinching to seal. Slice into 12 rolls.
  7. Prepare to Bake: Place the rolls in a greased baking dish, cover, and let rise for another 30-40 minutes until puffed.
  8. Preheat your oven to 350°F (175°C).
  9. Bake the rolls for about 25-30 minutes or until golden brown.
  10. Make the Cream Cheese Icing: Beat cream cheese until smooth. Add powdered sugar and heavy cream, mixing until desired consistency is reached.
  11. Cool and Frost: Once rolls have cooled slightly, drizzle the cream cheese icing generously over the top.

Notes

For a richer flavor, use ripe peaches. Adjust rising times as necessary.
