  • ¼ cup all-purpose flour
  • ¼ cup fine almond flour

  • 2 tablespoons almond slivers
  • Unsalted butter (to grease the pan)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 375°F and position your rack in the middle of the range.
  2. Grease a 10-inch cast iron or gratin dish generously with unsalted butter and set aside.
  3. Whisk the eggs with sugar in a medium bowl or KitchenAid stand mixer.
  4. Add the milk and slowly mix in the flour, vanilla, and salt, ensuring there are no lumps in the batter.
  5. Arrange the peach halves in a single layer in the pan.
  6. Pour the batter evenly around the peaches and sprinkle with almond slivers.
  7. Bake until the clafoutis puffs up and lightly browns, about 30 to 35 minutes.
