A delightful blend of roasted cauliflower with vibrant pesto and creamy Parmesan, perfect for cozy dinners or gatherings.

Ingredients

  • 1 head cauliflower, cut into florets
  • 1/4 cup pesto
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the cauliflower florets, pesto, olive oil, salt, and pepper in a large bowl. Toss until the cauliflower is well coated.
  3. Spread the cauliflower mixture onto a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and caramelized.
  5. Remove from the oven and sprinkle grated Parmesan cheese over the top.
  6. Return to the oven for an additional 5 minutes, until the cheese is melted and bubbly.
  7. Serve warm and enjoy!

Notes

For a vegan version, substitute nutritional yeast for Parmesan and use vegan pesto.
